There are two types of white sugar: Cane Sugar and Beet Sugar.

Cane Sugar Beet Sugar
Sugar Cane is a type of grass originally from southeast Asia. The thick stalk stores energy as sucrose in the sap. Sugar cane cultivation requires a tropical or subtropical climate. Sugar beet is a hardy vegetable (directly related to the beetroot) that can be grown commercially in a wide variety of temperate climates. it produces a large root with a 15-20% sucrose mass (by weight).
Cane Sugar Beet Sugar
Many chefs prefer Cane Sugar for cooking as it's regarded as a better product. Beet Sugar can take on a moldy smell due to the fact that it is grown in the ground. The smell often stays - absorbed into the sugar, especially when packed into small airtight packets. At Sugar Stix we offer pure cane sugar.
